While I am not technically from Montreal, as a Canadian, I do have some insight on the matter.
It would seem to me that the name you will hear on the lips of the Quebequois more than any other these days is Georges St Pierre. I know he's not technically a pro wrestler but he is more over than any of those other guys have been.
Saving that, it begins and ends with Mad Dog Vachon.

GSP is huge, but to answer Thai specific question I will have to go with Rougeau. He runs a small fed right now geared toward familywrestling shows. Wresting in Quebec was super big in the 50 and 60'S with Carpentier and Mad Dog Vachon (Luna's dad)
