I will take Tex's list and downsize it and add to it for what I think is awesome.
Six Flags Magic Mountain - This particular 6 Flags gets the best thrill rides first out of all the others. X is a RIDICULOUS ride, as are Goliath and Tatsu. Rides like Colossus, Viper, and Batman originated at this 6 Flags before being brought out and repackaged to the others.
Disneyland/California Adventures - you're from FL so you've prob done the World thing, so skip it.
Knott's Berry Farm - in Orange County, decent mix of stuff. Ghost Rider is one of the best wooden coasters out there. Also has some family-fun stuff, too. During the Halloween season, however, this is the best one to go to.
San Diego Zoo - One of the best sets of wildlife stuff in the country...if you're into that. The Zoo is open at night, but more importantly, the Zoo is located at Balboa Park where there are numerous museums and gardens to check out. It's actually quite nice.
San Diego Wild Animal Park - Have you ever been to the Bronx Zoo in New York, where their enclosures for certain animals are really big? Wild Animal Park has that, and it also has this "African Veldt"-like area that is sort of like a safari, but not quite. It's really nice - if you dig that kind of thing.
Other Stuff:
If you like museums/art:
In San Diego's Balboa Park, there are the Natural History Museum and the Rueben H. Fleet Science Center
In LA, you have the awesome Getty Art Museum , the LACMA and MOCA, both of whch have interesting exhibits quite often, and the California Science Center which has had amazing exhibits in recent history such as Body Worlds and the Marvel Super Heroes Science Exhibition. This February to April, we have the Star Wars Science Exhibition. It looks nice.
Venice Beach Boardwalk is my favorite place in the world. Freaks and subcultures galore. You could spend hours. I do everytime I go. Rent a bike, some skates, or just walk the boardwalk. Have a hot dog and a beer. Check out the drum circle, the graffiti artists, the rollerskate dancers, street performers like Jimi Hendrix on rollerskates. Or rent a surfboard and hit the ocean. IT's also in walking distance to Santa Monica Pier which is a little pier with amusement shit. It's no Coney Island, but it's fine.
San Diego's Mission Beach and La Jolla Shores/La Jolla Coves and Hermosa Beach in LA's South Bay are also worth checking out.
If you're here in the summer, I implore you go see a concert at The Hollywood Bowl. Weekdays are usually jazz and classical, but they also have world and contemporary acts on the weekends during the summer sessions. Tickets are as low as a dollar, you can take public transportation to get there, and you can bring in your own food and drink. Bring a cooler with some take out food (sandwiches or an easy pasta usually do the trick) and a bottle of wine and have a little picnic while listening to Herbie Hancock, The Neville Brothers, James Brown (RIP), The Flaming Lips, Massive Attack, or the LA Philharmonic performing Beethoven, Muggorsky, or songs from Looney Tunes cartoons or even video games. Did I say wine? Yeah. You can bring in your own alcohol.
Like Tex, I can also go on and on. And yeah, Court. So Cal is that awesome.
